Pipian of Tuxpan
Beautiful green and white striped fruits are extremely seedy and in this case that’s a good thing because the large silver-edged seeds are the part you want to eat. Toss them in a little olive oil and salt and roast until they are golden brown and crunchy. They make tasty, nutritious snacks and are also great tossed on salads or grain bowls. We feed the flesh to our chickens but it makes great compost too. Hails from the Mexican state of Veracruz and was grown out near Blyth Ontario in zone 5. Rare.
