Beets

Beta vulgaris
Sow in early spring when soil has warmed slightly and hard frosts are almost over. Cool weather produces the best root colour. Sow 1.5 cm deep, 10 seeds per 30 cm. For baby greens leave spacing as is and for roots thin to 5-7 cm. Eat the thinnings. Greens can be harvested throughout the season and do well when lettuce is not very productive in the heat of summer. Beets can also be sown indoors 5-6 weeks before last frost and transplanted to the garden. Be careful not to disturb the roots when transplanting. We prefer direct seeding.
