Amaranth - Red Callaloo
Callaloo is a popular Caribbean dish made with a variety of leafy greens and this red amaranth is the one often used in Jamaican callaloo. We have tried a few different callaloo greens and this one is a farm favourite. Tender leaves are delicious raw in salads as well as in any dish calling for cooked greens. Tall plants start producing as soon as the weather warms up and pump out greens in the summer heat when others greens are sulking. Nutritious leaves are rich in protein, iron, calcium and vitamins and are topped by deep red plumes that are beautiful in the garden or in a vase. Annual.
