Can’t grow globe artichokes? Try cardoon. When cooked, the leaf stalks and midribs of these spectaclar plants have a similar taste to artichokes. Before harvest plants are blanched for 3-4 weeks in the fall to tenderize the central stems. If not harvested to eat, large,silver, serrated leaves are topped by large, purple thistle like flowers and make a spectacular focal point in the garden. Hardy perennial in zones 6-7 but when we mulch with leaves or straw it survives most winters in our zone 5 garden.
