Spinach

Spinach is a cool season crop that likes moist fertile soil. Start seed in early spring as soon as soon as the soil can be worked and continue sowing every week or two until the soil is too warm for good germination (29 ˚ C). For baby leaf production sow seed 1 cm deep in a 5-10 cm band approximately 40 seeds per 30 cm of row. Begin harvest by clipping leaves at 3-5 weeks. For full size production so 9-10 seeds per 30 cm of row and space rows 30-45 cm apart. Sow in late July thru September for fall crops. Often overwinters under the snow in our zone 5 garden.
