Parsnip

Sow parsnip in early to mid-spring in deep, loose, fertile soil. Be patient as germination requires up to 3 weeks. Do not allow soil to dry out prior to seedling emergence. We often cover the parsnip bed with damp row cover to make sure the soil surface stays moist. Sow seeds 1.5 cm deep and space them 3cm apart in the row. Once seedlings emerge, thin to 1 plant every 5-7 cm. Parsnips are sweet after frost hits in the fall and can be left in the ground for a sweet taste treat the following spring.
