Sow parsnip in early tomid-springin deep, loose, fertile soil. Be patient asgerminationrequires up to 3 weeks. Do not allow soil to dry out prior toseedlingemergence. We often cover the parsnip bed with damp row cover to make sure the soil surface stays moist. Sow seeds 1.5 cm deep and spacethem 3cmapart in the row. Once seedlingsemerge, thin to 1 plant every 5-7 cm.Parsnips are sweet after frost hits in the fall and can be left in the ground for a sweet taste treat the following spring.
