Summer Savory
Satureja hortensis
Direct seed in full sun in spring after last frost or sow indoors 3-4 weeks before last frost. Sprinkle seed lightly on soil surface, press gently into soil (seed needs light to germinate) and water well. When seedlings emerge thin to 30-45 cm apart. If planting out transplants, try not to disturb the roots too much as savory dislikes transplanting. Pinch back growing tips to encourage branching. Successive sowings can be made through to mid summer for a supply of fresh tender growth. Harvest entire plant before frost and hang upside down to dry. When dry, strip off leaves and store for winter use.
