Rockwell Dry Bean
Rare cassoulet type bean which keeps its shape, yet cooks up creamy and rich and accepts many flavors. Heirloom grown by farmers from Whidbey Island Washington for its ability to germinate in cool soil and mature early. Plump beans are creamy white with burgundy mottling around the eye. This treasure is on the Slow Food Ark of Taste.
