Tongue of Fire Dry Bean
Fresh shell beans are a treat rarely found in the grocery store and this farm favourite is one of the best. It has plump, speckled beans that are encased in stringless, red-streaked pods that ripen earlier than most dry beans. Eat the young streaked beans as snaps or wait until seeds plump up and enjoy them as shelly or dried beans. The flavour and texture are excellent, especially braised in a garlicky tomato sauce. Large showy pods are popular at market.
