Amaranth - Guatemalan Gold
These nutrient-rich plants from ancient Maya offer strikingly beautiful golden heads followed by nutritious, nutty white seeds. Selected for its high yields and overall performance by our friend Rony Eleazar Lec Ajcot from his 2021 amaranth trials. Plants can be grown for their leaves, which give off a pleasant, nutty flavour when cooked. Seeds can be popped in a heated pan and make a healthy addition to any breakfast or salad – or they can be ground and used as flour. The plants grow 1.5-2m tall, and reach maturity within 120 days in temperate zones. This supercrop is extremely versatile – it is drought-resistant and will flourish in a wide variety of soil types. A real keeper.
