French Grey shallots, known as Griselle, are what many French chefs call the only genuine shallot. This variety must be grown from bulbs, never from seed. The flavour is where it really sets itself apart: rich and complex, with umami depth beneath a rough, grizzled grey exterior.
Planted in fall alongside your garlic, they’re hardy to zone 5 with a good layer of mulch over winter.
French Greys don’t store quite as long as common shallots, you can expect them to keep 3-4 months in storage. Of course, you can always freeze and/or pickle what you don’t get to right away.
